- 15 oz chickpeas
- 1.5 tbsp olive oil (for chickpeas)
- 3/4 tsp salt (for chickpeas)

- 3/4 tsp herbs de provence
- 1 large sweet potato (peeled and cut into 1/2-inch cubes)
- 1.5 tbsp olive oil (for sweet potatoes)
- 3/4 tsp salt (for sweet potatoes)
- 3/4 tsp cinnamon
- 1/2 tsp cumin
- 1 lb ground chicken
- 1 cup ricotta
- 1 egg
- 1/2 cup panko
- 1 shallot
- 3 green onions
- 3/4 cup cilantro
- 1/2 cup dill
- 1.5 lemon zest
- 3/4 tsp salt (for meatballs)
- 3/4 tsp pepper (for meatballs)
- 2 tbsp olive oil (for sauce)
- 1.25 cup yogurt
- 1.5 cup basil
- 1.5 lemon juice
- 1.5 tbsp olive oil (for sauce)
- 1.5 tbsp honey
- 1 jalapeño (seeded and finely minced)
- 3 cloves garlic (pressed)
- Salt and pepper to taste
- 4 cups kale (stemmed and torn into 1-inch pieces)
Instructions
- Preheat oven to 400°F (200°C).
- In a mixing bowl, combine chickpeas with olive oil, salt, garlic powder, onion powder, and herbs de provence; toss to coat.
- Spread sweet potato cubes on a baking sheet; drizzle with olive oil, salt, cinnamon, and cumin. Roast for about 25 minutes until tender.
- In another bowl, mix ground chicken with ricotta cheese, egg, panko, shallot, cilantro, dill, lemon zest, salt, and pepper; form into meatballs.
- Bake meatballs on a baking sheet for 20 minutes or until fully cooked.
- For sauce: mix yogurt with basil, dill, lemon juice, olive oil, honey, jalapeño, garlic; season to taste.
- Assemble by placing kale at the bottom of the bowl topped with roasted sweet potatoes and meatballs; drizzle generously with sauce.
