Ingredients

  • 2 cups cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp olive oil
  • 1 tbsp red apple vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. Wash the vegetables thoroughly. Dice the cucumber into bite-sized pieces, halve the cherry tomatoes, and slice the red onion thinly.
  2. In a large mixing bowl, combine cucumber, cherry tomatoes, sliced red onion, Kalamata olives, and crumbled feta cheese. Toss gently.
  3. In a small bowl, whisk together olive oil, red apple vinegar, dried oregano, salt, and pepper until well blended.
  4. Pour the dressing over the salad mixture and toss gently until all ingredients are coated evenly.
  5. Serve immediately or refrigerate for about 30 minutes to let flavors meld.
