  • 2 boxes white cake mix (plus required ingredients)
  • 1 package lime jello
  • 1 cup shredded coconut
  • 1 teaspoon coconut extract
  • 1 tub key lime frosting
  • Green sprinkles (for topping)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini bundt pan with non-stick spray.
  2. Prepare the cake mixes according to package instructions. Divide batter into two bowls.
  3. In one bowl, mix in shredded coconut and coconut extract; in the other bowl, add dry lime jello.
  4. Fill each bundt well with 1/3 cup coconut batter followed by 1/4 cup lime batter.
  5. Bake for approximately 22 minutes or until a toothpick comes out clean.
  6. Cool cakes in the pan for 20 minutes before transferring to a wire rack.
  7. Microwave frosting for around 30 seconds until runny; drizzle over cooled cakes and garnish with toasted coconut and lime zest.
