- 1/8 cup granulated sugar
- 1 large egg yolk (room temperature)
- 1 tsp vanilla extract
- ¾ cup + 2 tbsp all-purpose flour
- 1/2 tsp fine sea salt
- 1/2 tsp baking soda
- 4 Oreos (chopped; plus more for the top)
- 4 tbsp unsalted butter
- 1/3 cup semi-sweet chocolate chips
- 1/4 cup + 1/8 cup granulated sugar
- 1 large egg (room temperature)
- 1 tsp vanilla extract
- 1/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 tsp fine sea salt
Instructions
- Preheat your oven to 350°F (180°C) and line an 8×8 baking pan with parchment paper.
- For the cookie layer, cream together unsalted butter, light brown sugar, and granulated sugar until fluffy. Mix in egg yolk and vanilla. Gradually fold in flour, salt, baking soda, and chopped Oreos.
- For the brownie layer, melt unsalted butter and chocolate chips until smooth. Allow to cool slightly, then whisk in sugar, egg, and vanilla until fluffy. Fold in flour, cocoa powder, and salt.
- Scoop portions of cookie dough into the pan alternately with brownie batter. Press down each dollop and sprinkle extra chopped Oreos on top.
- Bake for 25–27 minutes or until golden brown. Let cool before cutting into squares.
