  • 10g salt
  • 300ml cold whole milk
  • 60g melted unsalted butter
  • 250g cold European butter
  • 200g dark chocolate (70% cocoa)
  • 150g roasted pistachios
  • 50g brown sugar
  • 1 tsp vanilla extract
  • Pinch of sea salt


Instructions

  1. Prepare the dough by mixing flour, sugar, yeast, and salt. Add cold milk and melted butter, then knead until smooth. Wrap in plastic and refrigerate for at least 4 hours.
  2. Create a butter block with cold European butter between parchment paper; chill until ready.
  3. Roll out the chilled dough, incorporate the butter block, and laminate by folding and rolling several times with chilling breaks.
  4. Make the filling by pulsing pistachios, brown sugar, vanilla extract, and sea salt in a food processor.
  5. Shape croissants by cutting the laminated dough into rectangles filled with chocolate and pistachio mixture; roll them tightly.
  6. Let rise until doubled in size before baking at 400°F (200°C) for about 18-20 minutes until golden brown.
