- 3 pounds boneless skinless chicken thighs (or breasts)

- 1 can chipotle peppers in adobo sauce (7 oz)
- 4 tbsp fresh lime juice
- 4 tbsp fresh orange juice
- 1/2 cup fresh cilantro
- 6 garlic cloves
- 1 medium onion (quartered)
- 1 tsp cumin
- 1 tbsp dried oregano
- 1 tsp ground coriander (optional)
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- In a blender or food processor, combine chipotle peppers, lime juice, orange juice, cilantro, garlic cloves, onion, cumin, oregano, coriander (if using), smoked paprika, salt, and pepper. Blend until smooth.
- Place chicken in a mixing bowl and drizzle with olive oil. Pour the marinade over the chicken and mix well to coat. Allow marinating for at least 15 minutes.
- Preheat grill or grill pan over medium-high heat. Remove excess marinade from the chicken and place on the grill. Cook for about 5-7 minutes on each side until internal temperature reaches 165°F.
