  • 2 tsp olive oil
  • 1 can chipotle peppers in adobo sauce (7 oz)
  • 4 tbsp fresh lime juice
  • 4 tbsp fresh orange juice
  • 1/2 cup fresh cilantro
  • 6 garlic cloves
  • 1 medium onion (quartered)
  • 1 tsp cumin
  • 1 tbsp dried oregano
  • 1 tsp ground coriander (optional)
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp pepper


Instructions

  1. In a blender or food processor, combine chipotle peppers, lime juice, orange juice, cilantro, garlic cloves, onion, cumin, oregano, coriander (if using), smoked paprika, salt, and pepper. Blend until smooth.
  2. Place chicken in a mixing bowl and drizzle with olive oil. Pour the marinade over the chicken and mix well to coat. Allow marinating for at least 15 minutes.
  3. Preheat grill or grill pan over medium-high heat. Remove excess marinade from the chicken and place on the grill. Cook for about 5-7 minutes on each side until internal temperature reaches 165°F.
  4. Let the chicken rest for a few minutes before slicing and serving.
