  • 240 g all-purpose flour
  • 100 g powdered sugar
  • 40 g shredded almonds
  • 120 g cold cubed butter
  • 1 large egg
  • 300 g raspberries (fresh or frozen)
  • 180 g mango (cut into small cubes)
  • 180 g sugar
  • 2 tbsp lemon juice


Instructions

  1. In a food processor, pulse together all-purpose flour, powdered sugar, shredded almonds, and salt until combined. Add cold butter and blend until crumbly.
  2. Mix in the egg and vanilla extract until dough forms. Shape into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
  3. Preheat oven to 180°C (350°F). Roll out the chilled dough and fit it into a tart pan. Bake for about 20 minutes until lightly golden. Cool completely.
  4. In a saucepan over medium heat, combine raspberries, mango cubes, sugar, lemon juice, egg yolks, cornstarch, salt, and cubed butter. Stir continuously until thickened (about 5 minutes).
  5. Pour the filling into the cooled crust and let it cool at room temperature before refrigerating for at least 2 hours to set.
  6. Garnish with fresh raspberries and mango slices before serving.
