  • 22 oz raspberries (fresh or frozen)
  • 1 cup granulated sugar
  • 2 lemons (juiced)
  • 1 cup unsalted butter
  • 1 lb mascarpone cheese
  • 2 cups raspberry curd (cooled)
  • 2 packs ladyfingers
  • 1 cup whipping cream


Instructions

  1. Prepare the raspberry curd by cooking raspberries with sugar and lemon juice until thickened. Allow it to cool.
  2. In a bowl, whisk eggs, egg yolks, sugar, and salt until pale. Gradually mix in softened butter. Fold in mascarpone cheese and whipped cream gently until combined.
  3. Dip ladyfingers briefly in water mixed with optional fruit juice, then layer half in a dish. Spread half of the filling and half of the raspberry curd over them. Repeat the layers.
  4. Cover tightly and refrigerate for at least four hours or overnight before serving.
