Ingredients
- 1 1/3 c all-purpose flour
- 1/8 tsp salt
- 3 eggs
- 2 tbsp olive oil
- 6 tbsp granulated sugar
- 1 lemon (zested)
- 7 oz Ricotta cheese
- 1 tsp vanilla extract
- 1/4 tsp lemon juice
- 1 tbsp icing sugar (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with parchment paper.
- In a mixing bowl, whisk together flour and salt. In another bowl, beat 1 egg, olive oil, and 3 tablespoons of sugar until frothy. Combine this mixture with the flour until just mixed.
- For the filling, beat 2 eggs with remaining sugar until light; add Ricotta cheese, lemon zest, vanilla extract, and lemon juice. Mix until smooth.
- Fill muffin cups halfway with batter; add a spoonful of filling on top. Cover with more batter if desired.
- Bake for about 50 minutes or until golden brown and set in the center.
- Cool slightly before serving and dust with icing sugar if desired.
