Description

Ingredients

  • 6 cups strawberries (cleaned, tops removed)
  • 4 cups lemon juice (fresh or bottled)
  • 6 cups granulated sugar


Instructions

  1. Prepare your water bath canner by filling it with water and bringing it to a boil. Gather pint jars, lids, and bands, placing lids in simmering water.
  2. Puree the cleaned strawberries in a food processor until smooth, then transfer them to a large stainless steel saucepan.
  3. Add lemon juice and granulated sugar to the strawberry puree. Stir well and heat over medium until it reaches 190°F—do not boil.
  4. Fill hot pint jars with the mixture, leaving 1/4 inch headspace. Secure lids fingertip tight.
  5. Process jars in boiling water for 15 minutes. After processing, let the jars sit undisturbed for 12–24 hours until sealed.
