  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the vanilla extract and sour cream (or buttermilk) until smooth.
  5. In another bowl, whisk together the all-purpose flour and baking powder. Gradually fold into the wet ingredients until just combined.
  6. Gently fold in the diced strawberries and crushed pineapple using a rubber spatula.
  7. Pour batter into the prepared pan and tap gently to remove air bubbles.
  8. Bake for 60–75 minutes, checking doneness with a toothpick.
  9. Allow to cool in the pan for 10–15 minutes before transferring to a wire rack to cool completely.
