  • ½ cup water
  • ¾ cup granulated sugar
  • 4 tablespoons lemon juice
  • 1 ½ cups heavy cream
  • 16 oz mascarpone cheese
  • ¾ cup granulated sugar (for filling)
  • 2 teaspoons vanilla extract
  • 260 g ladyfingers
  • Freeze-dried strawberries (for garnish)


Instructions

  1. Prepare strawberry syrup by cooking strawberries and water in a saucepan. Mash and strain to extract juice, then add sugar and lemon juice, simmering until thickened.
  2. In a bowl, whisk together mascarpone cheese, sugar, and vanilla until smooth. Whip heavy cream to stiff peaks and gently fold into the mascarpone mixture along with cooled strawberry syrup.
  3. Dip ladyfingers briefly in remaining syrup and layer them in a serving dish. Spread half of the mascarpone filling over, then repeat the layering process.
  4. Refrigerate for at least 6 hours or overnight for best results.
