  • 1/2 bell pepper (thinly sliced)
  • 1 pound ground chicken (lean, or diced chicken breast or ground turkey)
  • 2 teaspoons light brown sugar
  • 1 Tablespoon hoisin sauce
  • 1/4 cup low-sodium soy sauce
  • 2 Tablespoons Asian Garlic Chili Sauce or Sambal Oelek
  • 1 cup low-sodium chicken broth
  • 1/4 cup water
  • 1 teaspoon cornstarch
  • 2/3 cup fresh basil leaves
  • Cooked Jasmine rice (for serving)


Instructions

  1. Heat olive oil in a large wok or skillet over medium-high heat.
  2. Sauté sliced shallots until translucent, then add garlic and ginger, cooking briefly.
  3. Add bell pepper and sauté until tender yet crisp.
  4. Incorporate ground chicken (or turkey), breaking it up while cooking until no longer pink.
  5. Mix in light brown sugar, hoisin sauce, and chili sauce until well combined.
  6. Pour in chicken broth; thicken the sauce using a cornstarch slurry.
  7. Stir in fresh basil leaves until wilted.
  8. Serve over cooked Jasmine rice or in lettuce wraps.
