  • 1/2 cup ditalini pasta
  • 8 oz sweet Italian turkey sausage
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 3 carrots, peeled and diced
  • 2 stalks celery, diced
  • 3 cups chicken broth
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) great northern beans, drained and rinsed
  • 1 can (15 oz) dark red kidney beans, drained and rinsed
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 3/4 teaspoon dried thyme
  • Kosher salt and freshly ground black pepper, to taste


Instructions

  1. In a large Dutch oven sprayed with cooking spray over medium-high heat, cook the turkey sausage until browned. Drain excess fat and set aside.
  2. Add the garlic, onion, carrots, and celery to the pot. Sauté until tender.
  3. Stir in chicken broth, crushed tomatoes, herbs, salt, and pepper; bring to a boil. Reduce heat and simmer for about 10 minutes.
  4. Add uncooked pasta and both types of beans to the pot; heat until warmed through.
