Ingredients
- 1 lb carrots, peeled
- 3 tbsp olive oil
- 1 tbsp za'atar spice
- 1/4 tsp cumin
- Salt & pepper
- 1/2 cup feta cheese
- 3 tbsp ricotta
- 2 tsp olive oil
- 1 tbsp lemon juice
- Pinch salt & pepper
- 1 tbsp chopped fresh mint
- 2 tbsp chopped fresh parsley
- Olive oil
- Date syrup or honey
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the carrots diagonally into even pieces. Toss in a mixing bowl with olive oil, za'atar, cumin, salt, and pepper until well-coated.
- Spread the carrots on a parchment-lined baking sheet in an even layer. Bake for about 30 minutes, flipping halfway through.
- While the carrots roast, blend feta cheese, ricotta, olive oil, lemon juice, salt, and pepper in a food processor until smooth.
- Once roasted, arrange the feta dip on a serving platter and top with roasted carrots. Garnish with fresh herbs and a drizzle of olive oil.
